Cornbread Bites, Spicy (Mini-muffins)

These perfectly portioned bites will steal the show at your next game day feast. Serve them with hearty dishes like ribs and fried chicken, or simply with a smear of butter or drizzle of honey.

- 3/4 cup yellow cornmeal
- 1/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon fine salt
- 1/2 cup milk
- 1/4 cup unsalted butter, melted
- 1/4 cup sugar
- 1 large egg, lightly beaten
- 1 medium jalapeno, seeded and diced
- 1/3 cup shredded pepper jack cheese

Step 1
Preheat the oven to 375 degrees F. Grease a 24-cup mini muffin pan (or two 12-cup pans) with butter or cooking spray.
In a medium bowl, whisk the cornmeal, flour, baking powder and salt together.
In another medium bowl, whisk the milk, butter, sugar and egg together. Pour the wet mixture into the dry mixture and stir to combine. Fold in the chopped jalapeno and cheese.
Fill 18 cups of the prepared pan with the mixture, about 2/3 full. Bake in the oven until a toothpick inserted into the center of a muffin comes out clean, about 12 minutes. Let sit in the pan for 5 minutes before cooling on a rack.
Tip: For spicier muffins, include the jalapeno seeds and membranes.
