These yummy applesauce streusel muffins are perfect for breakfast, brunch or quick snack. They're very simple to make and are always a huge hit with family and friends.

Ingredients
- Streusel Topping:
- 1/2 cup butter, softened
- 1 cup sugar
- 1 cup applesauce
- 2 cups all-purpose flour
- 1 egg, beaten
- 1 teaspoon baking soda
- 1 1/2 teaspoons cinnamon
- 1/4 teaspoon salt
- 1 apple, peeled and diced
- 1/4 cup butter, softened
- 1/2 cup flour
- 1/2 cup quick-cooking oats
- 1/4 cup brown sugar
- 1 teaspoon cinnamon
Preparation
Step 1
Combine butter, sugar, applesauce and egg in a mixing bowl and beat on low speed until combined.
In a separate bowl, combine flour, baking soda, cinnamon, and salt. Mix dry mixture into butter mixture just until moistened. Stir in apples.
Fill paper-lined muffin cups 3/4 full. Sprinkle each with some of the streusel topping.
Bake in a pre-heated 350°F oven for 20 to 25 minutes.
Topping Directions:
Blend all ingredients with a pastry blender until crumbly.
