Ingredients
- 3 1/2 lbs. shrimp, peeled and deveined
- 2 whole onions, chopped
- 1 green bell pepper, chopped
- 3 cloves garlic, chopped
- 1 pound ham, chopped
- 4 stalks celery, chopped
- 1/2 c. renedered bacon fat
- 1 1/2 pounds hot Italian sausage, cliced and sauteed
- 1 12 oz can Rotelle Tomatoes w/green chilies, drained and chopped
- 1 12 oz. can chicken broth
- 8 fl. ounces dry vermouth
- 1 1/2 c. raw rice
- 1/2 c. fresh parsley

Preparation
Step 1
Saute chopped vegetables until wilted and almost brown in bacon grease about 15 minutes. Add cooked sliced sausage, raw peeled shrimp, and a can of tomatoes and broth. Bring to a boil. Add dry vermouth. Add rice and mix. Put in baking dish and bake 1 1/2 hours at 350 degrees. Make sure rice is done.
