Ingredients
- 1 whole chicken cut up
- Flour
- 3 chopped garlic cloves
- vinegar peppers
- 1/2 cup balsamic
- pinch of thyme and rosemary
- 2 cups veal stock
- 1 finely diced onion

Step 1
Dust chicken pieces with flour. Sear in tall sided saute pan, large enough to hold pieces of chicken, on medium hight heat with good amount of oil. Cook on stove top for 5 - 8 minutes, or until golden brown and delicious.
Remove chicken from pan and discard excess oil(make sure to keep the "fond" which are drippings of chicken stuck to the bottom of pan)
Saute 3 chopped garlic cloves , one finely diced onion and pinch of fresh thyme and rosemary for 2 minutes.
Add 1/2 cup of balsamic, more if you prefer a stronger flavor and 2 cups veal stock. (Shop Rite carries it) AMounts of liquid may may depending on size of pan and amount of chicken, make sure not to completely submerge chicken in liquid, but enough to cover on 3/4 meat.
Add vinegar peppers, enough to your preference (you can use sweet and hot). Bring liquid to boil and place chicken, skin side up, back in pot.
Cook in oven at 375 for approximately 10-15 minutes, or until chicken is completely cooked,
Remove chicken from pan and simmer liquid till it comes to sauce like consistency. Finish sauce with 1 tbsp butter. Arrange chicken and spoon over chicken.
