Chocolate Chip Cookies

Ingredients
- 1 cup butter, room temperature
- 1 cup firmly packed light brown sugar
- 1 cup granulated sugar
- 2 large eggs
- 1 1/2 t vanilla extract
- 2 1/2 cups all-purpose flour
- 1 1/2 t baking soda
- 1 t salt
- 2 cups semi-sweet chocolate chips, mini or regular size

Step 1
Beat the butter and both sugars together until creamy and pale. Mix in the eggs one by one and then the vanilla. Scrape down the sides of the bowl. In a separate bowl, combine the flour, baking soda, and salt. Mix the flour mixture into the butter-sugar mixture until barely combined. Add the chocolate chips and mix until evenly distributed. Form into 1 1/2" balls and slightly flatten each with your palm. Place on a baking sheet lined with parchment paper or a silicone mat, side by side. Chill thoroughly in the freezer, for at least 1 hour. May store in freezer for up to a week.
When you are ready to bake, preheat the oven to 350 F. Space the frozen cookies on new lined baking sheets 2" apart, 12 per sheet. Bake until the edges just start to turn golden and the middle is still pale, 12-15 minutes.
