Ingredients
- juice of 2 limes + 2 lime wedges
- 4 shots coconut vodka (Ciroc)
- 2 T mint-infused simple syrup (see recipe below)
- ice
- seltzer
- fresh mint leaves

Step 1
Combine juice from 2 limes, 4 shots coconut vodka, 2 T simple syrup, 10-12 mint leaves and several ice cubes into a shaker. Shake until combined. Pour over ice into 2 pint glasses. Fill remainder of glass with seltzer. Garnish with lime wedges. Enjoy!
Mint-Infused Honey Simple Syrup:
1/4 C water
1 C honey
7 large fresh mint leaves
Combine all ingredients in a small saucepan. Smash the mint with a spoon against the side of the pot to release the oils.
Bring to a simmer; continue to simmer for 5 minutes.
Remove from the heat.
Remove the mint leaves (strainer or other) and pour syrup into a glass container.
Refrigerate and use!
