Ingredients

  • 1 1/2 cups flour
  • 3/4 teaspoon baking powder
  • 3/4 cup plus 2 tablespoons sugar, divided
  • 2 pinches salt
  • 2 egg yolks
  • 1 1/4 cups milk
  • 2 egg whites
  • 4 large apples, peeled and cut into 1/4-inch slices (20+ slices)
  • 2 teaspoons ground cinnamon, divided
  • 1/4 and 1/8 teaspoon ground ginger
  • 1/8 teaspoon ground allspice
  • 3/4 teaspoon 5-spice

1.In a bowl, combine flour, baking powder, 2 tablespoons sugar, and salt. Add yolks and milk and whisk just until the ingredients are combined. Do not over mix.
2. Whip egg whites in a separate bowl until they form firm, but not dry peaks. Fold into the batter.
3. Using a small, round cookie cutter, cut the cores from the apple slices so as to form rings.
4. Heat the oil in a deep fryer to 375 F. Dip the apple slices one at a time into the batter so as to completely coat them. Immediately, and carefully, place the slice in the oil. Continue to batter several more slices and put in fryer. Once the slices are well browned on one side, flip them over and cook the other side. Remove from the fryer and place on a plate lined with paper towels to absorb the excess fat.
5. To make dipping sugars: For cinnamon sugar, combine 1 1/2 teaspoons cinnamon with 1/4 cup of sugar. For ginger spice dipping sugar, combine 1/2 teaspoon cinnamon, ginger, allspice and nutmeg with 1/4 cup of sugar. For 5-spice dipping sugar, combine 1/4 cup of sugar and 5-spice.
5. Serve immediately with assorted dipping sugars. The apple beignets should be well-coated with dipping sugar before being eaten.
