Ingredients
- 4 eggs separated
- 3/4 cup caster sugar
- 3/4 cup corn flour
- 1/2 teaspoon cinnamon
- 2 big teaspoons ginger
- 1 big teaspoon cocoa
- 1 level teaspoon cream of tartar
- 11/2 level teaspoon carb soda
- 1 desert spoon golden syrup

Preparation
Step 1
Sift dry ingredients once
beat egg whites and a pinch of salt until very fluffy
add egg yolks one at a time
add golden syrup
sift in dry ingredients and fold into mix with a spoon with a hole in it, lift up and you fold in
pour into 2 greased and floured sponge tins
bake at 200 celsius for 20 mins
