Ingredients
- 2 medium tomatoes, seeded and diced
- 1/4 c. diced white onion
- 1 serrano or jalapeno pepper, seeded and finely chopped
- 2 Tb. lime juice
- 1 Tb. extra virgin olive oil
- 1 medium ripe avocado, (opt.) diced
- salt to taste

Step 1
Toss together first 5 ingredients and, if desired, avocado in a medium bowl. cover and chill 1 hour. Season with salt to taste.
