The author notes...Try substituting cashews for almonds and a dash of sesame oil for sesame seeds. This is an overnight salad so be sure to plan accordingly.

MY NOTE: As of 8/18/12 I have not made this yet but my thought is that the sugar and flavor packet would probably mix well with the oil/vinegar mix and be better distributed.

Ingredients

  • 2 boneless chicken breast halves, cooked and diced
  • 2 oz sliced almonds
  • 2 green onions, chopped
  • 1 T while sugar
  • 2 T sesame seeds
  • 1 (3 oz) package ramen noodles, crushed
  • 1/2 medium head cabbage, shredded
  • 1/2 cup vegetable oil
  • Salt and pepper to taste
  • 3 T white vinegar

Preparation

Step 1

Combine chicken, nuts, onion, sugar, sesame seeds, noodles and their flavor packet and cabbage in large bowl.

In a small bowl combine oil, salt, pepper and vinegar. Pour oil mixture over noodle mixture. Let stand overnight in refrigerator and serve.
