Ingredients
- 1.5 kilos osso buco
- 3-4 tablespoons plain flour
- 1 1/2 cup chopped onions
- 1 cup chopped celery
- 2 cups chopped carrots
- 2 tablespoons chopped garlic
- 1 small and 1 large can chopped toms
- 1 1/2 cups dry white wine
- juice from 1 orange
- 1 1/2 cups water
- 2 beef bouillon cubes
- 1 teaspoon dry thyme
- 3 sprigs fresh thyme
- 2 teaspoons grated orange peel
- 1 teaspoon grated lemon peel
- 2 bay leaves
- oil for cooking plus salt and pepper

Preparation
Step 1
Sprinkle meat with salt and pepper then roll in the flour
Brown meat on all sides
remove meat and set aside
add carrot, celery, onions and garlic, cook until tender
return meat to pot
add tomatoes, wine, orange juice, bay leaves, orange and lemon peel, beef bouillon,thyme, water and a dash of pepper.
cover and cook until done, probably at least 3 hours.
remove meat and reduce sauce if needed
