Apple Fritters with Warm Toffee Maple Sauce

Serve warm with a maple-tinged caramel sauce. Big chunks of apple in a golden batter with a touch of spice. Great for breakfast, brunch or a summery, post BBQ dessert.

Ingredients
- 4-6 large apples
- 2 1/4 cups all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon cinnamon
- 1/2 teaspoon salt
- 2 eggs
- 1 cup milk
- 1 1/2 teaspoons pure vanilla extract
- Oil for deep frying

- Sugar
- 3/4 cup, approximately, dulce de leche, caramel topping, or crème brulee
- 1/4 cup pure maple syrup

Step 1
Slice the apples into 1/2 inch rings. In a medium bowl, mix together flour, sugar, baking powder, nutmeg, cinnamon and salt. In a separate bowl, beat together eggs, milk and vanilla. Stir milk mixture into flour mixture until smooth.
Heat the oil to 375 degrees F (190 degrees C) in a deep fryer or heavy bottomed deep pot or skillet.
Dip apple slices in batter and fry, a few at a time, turning once, until golden. Drain on paper towels and dust with confectioners' sugar.
Warm the dulce de leche or caramel or butterscotch sauce with 1/4 cup maple syrup. Drizzle sauce on fritters.
