Ingredients
- 1 c dried lentils, washed
- 2 qts water
- 1/4 c tomato sauce
- 2 t salt
- 1 t oregano
- 1/2-1 t basil
- 1/2 t thyme
- fresh ground pepper
- 1 clove garlic, minced
- 2 stalks celery, sliced
- 1 onion, sliced
- 3 carrots, sliced
- 6 mushrooms, sliced
- 1 baking potato, unpeeled and cut into chunks
- 1/3 c fresh parsley
- 2 16 oz cans tomatoes, drained
- 4 oz pork sausage, browned and well drained
- 1 T butter
- lots of fresh grated parmesan cheese

Preparation
Step 1
Combine all ingredients except tomatoes, sausage, butter, and parmesan cheese. Cover and simmer for 1 hour. Add tomatoes and browned sausage; simmer 15-30 min longer. Add butter, blending into soup. Sprinkle each serving with parmesan cheese.
