Ingredients

  • 1 1/4 cups sugar
  • 2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon salt (preferably sea salt)
  • 1/2 cup canola oil
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 1/3 cup flour
  • 1/4 cup coarsely chopped walnuts
  • 2 1/2 cups Granny Smith apple slices (peeled), from about 3 medium apples

ADJUST oven rack to middle level and preheat oven to 325 degrees. Butter a 9- by 13- by 2-inch baking dish.

COMBINE sugar, baking soda, cinnamon and salt in the bowl of an electric mixer. In a separate bowl, combine the canola oil, eggs and vanilla. Add to the sugar mixture and mix until combined well.

ADD flour, a little at a time, with the mixer on low speed. Mix just until incorporated. Fold in walnuts and apples.

SPREAD batter in prepared pan. Bake for 45 minutes, turn cake 180 degrees and bake until done, another 45 minutes. Cake should be set but still moist. Allow to cool at least 30 minutes before cutting.
