GROUND TURKEY****Turkey and Spinach Ragù on Parmesan Polenta

27/09/15 - This was really good, especially considering how easy it is. Nice idea when you want something quick but comforting. The sauce made 3 servings, not 2. Dan can eat the third one as a sloppy joe sandwich

Ingredients
- RAGU:
- 1/2 tablespoon olive oil
- 6 ounces ground turkey or sweet turkey Italian sausage, casings removed
- 1/2 cup finely chopped onion
- 1/2 cup finely minced mixed sweet peppers
- 2 garlic cloves, minced
- pinch of ground pepper flakes
- pinch each of dried basil and oregano
- 3/4 cup marinara sauce or cherry tomato sauce
- 2 cups coarsely chopped fresh spinach
- POLENTA:
- 60 grams/1/4 cup instant white or yellow polenta
- pinch of salt
- 3/4 cup chicken broth
- 1/4 cup 2% milk
- 1 tbsp. Becel or unsalted butter
- 2 tbsp. (10 grams) finely grated parmigiano reggiano
- pinch of freshly grated nutmeg
- salt and pepper to taste
- TO SERVE:
- Freshly grated parmigiana reggiano or pecorino romano
- Shredded fresh basil, for me

Step 1
RAGU:
Heat a large skillet over medium-high heat with olive oil. Add turkey; sauté until no longer pink, stirring to crumble. Add onion, and sauté 4 minutes. Add garlic; sauté 1 minute. Stir in marinara, and 1 or 2 tablespoons water or chicken broth, if needed; bring to a boil. Reduce heat; simmer 20 minutes. With about 3 minutes remaining, add chopped spinach to the ragu and stir to combine.
POLENTA:
Bring broth and milk to a boil in a medium saucepan over medium heat with a pinch of salt. Gradually add polenta, and cook for 3 minutes or until thick, stirring constantly. Remove from heat; stir in becel, cheese, salt and pepper. Serve with sausage mixture. Grate cheese over each serving and sprinkle fresh basil over mine.
