Ingredients
- 2 medium sized onions, chopped
- 2 Tbsp vegetable oil
- 2 cans (7oz each) diced green chiles
- 1 tsp salt
- 1 small can (5 oz) evaporated milk
- 2 cups (8oz) jack or Longhorn colby cheese

Preparation
Step 1
Cook onion in oil over medium low heat until very soft. Add chiles and salt and simmer, stirring, until juices have evaporated (about 5 minutes). Add milk and simmer gently, stirring, until slightly thickened (about 4 minutes). Remove from heat, cool about 2 minutes, add shredded cheese, and cover until cheese melts. Then stir and serve hot.
