Ingredients
- 1 T olive oil
- 1 med onion, chopped
- 1 large green pepper, chopped
- 1 jalapeno pepper, seeded and chopped
- 1 bay leaf
- 1 1/2 cup chopped leftover turkey
- 1 1/2 T chili powder
- 1 1/2 T ground cumin
- 2 t cayenne pepper
- 2 cups corn, drained
- 1 (32 oz) can chunky style crushed tomatoes
- 2 cups chicken broth or stock

Preparation
Step 1
Heat oil, add veggies and bay leaf, cook for 5 minutes. Stir in turkey, and seasonings. Add corn, broth and tomatoes. Mix well and simmer till done.
