Preparation

Step 1

Melt 1/2 cup butter or margarine in a 2 quart pan over medium heat; add 1 large clove of garlic, minced, and 1/4 cup minced onion. Cook, stirring often until onion is soft (about 10 minutes). Stir in 3 Tbsp catsup; 2 Tbsp each minced parsley, lemon juice, and red wine vinegar; 1 tsp each dry mustard and liquid hot pepper seasoning, 1/8 tsp ground red pepper (cayenne) and 1/4 cup beer. Bring to a boil; then reduce heat and simmer, uncovered, until flavors are blended (about 5 minutes). Makes about 1 cup.
