Mussels Marinara

Ingredients
- 4-5 pounds mussels, cleaned well
- 1/4 cup olive oil
- 1 medium onion, diced
- 4 cloves garlic, minced
- 1 cup white wine
- 2 (16 oz.) cans diced tomatoes
- t.t. salt & pepper
- 2 tablespoons parley, chopped
- 2 tablespoons basil, chopped

Preparation
Step 1
Heat oil in a large saute pan over medium heat. Add the onion and cook for 2 minutes. Add the garlic and cook for 2 minutes.
Add the wine and simmer until it is reduced by half. Add tomatoes, parsley and basil. Simmer for 4 minutes.
Add the mussels and cook for aabout 10 minutes or until all mussels are open.
Transfer to a large bowl and serve with garlic bread or pasta.
