Ingredients

  • 10 cups Zucchini
  • 5 cups Onions
  • 5 Tbsp Salt
  • 1 Red pepper – (green is good option too)
  • 2 1/4 cups vinegar
  • 1 Tbsp dry mustard
  • 1 tsp Nutmeg
  • 3 1/2 cups Sugar
  • 1/2 tsp Black Pepper
  • 1 tsp Turmeric
  • 2 tsp Celery Salt

Preparation

Step 1

Grind / Grate Coarsely:

10 cups Zucchini
5 cups Onions
5 Tbsp Salt
1 Red pepper – (green is good option too)

Let stand over night then drain, rinse and rinse again.

Then add:

2 1/4 cups vinegar
1 Tbsp dry mustard
1 tsp Nutmeg
3 1/2 cups Sugar
1/2 tsp Black Pepper
1 tsp Turmeric
2 tsp Celery Salt

Boil 30 mins or until tender, put in a canning jar and place seal and ring on top. Yield 8 pints

If you grate small Zucchini use entire Zucchini. If you use large Zucchini just cut in half and with a spoon scrape out seeds.

You will need to water bath the jars for for 15-20 minutes, take out and let cool on counter. They will “pop and seal” as they cool.
