Ingredients

  • Pastry for a single crust 9 inch pie
  • 1/2 cup fine fresh bread crumbs
  • 2 eggs, well beaten
  • 2 Tbsp butter, softened
  • 1/2 cup shredded sharp cheddar cheese
  • 1/3 cup milk
  • 1/4 tsp hot sauce
  • 1/4 tsp salt
  • Dash of pepper
  • 1 tsp baking powder

Preparation

Step 1

Prepare your own pastry or use a pie crust mix. Roll out dough on a lightly floured board into about a 12 inch circle. With a 3 inch cookie cutter, cut dough into rounds. Using a muffin pan whose cups are 1 3/4 inch in diameter, press and fit each round into bottom and sides of muffin cups. Continue to reroll and cut pastry scraps to make a total of 15 to 18 shells.

Mix together crumbs, eggs, butter, cheese, milk, hot sauce, salt, pepper, and baking powder. Fill each tart shell with about 1 Tbsp cheese mixture. Bake, uncovered in a 400 degree oven for 25 minutes or until top is set when lightly tapped.
