Breakfast type pancake baked in a pie plate. Just add pancake syrup or honey and enjoy. You can also add 1/2 tsp. vanilla and a little cinnamon to make it taste more like pancakes/french toast.

Ingredients

  • 3/4 cup milk
  • 1/2 cup uncooked bulgur
  • 8-12 oz. little smokies, browned (or 6-8 breakfast sausages)
  • 2 beaten eggs
  • 1/2 cup oil
  • 1 cup flour
  • 2 tsp. baking powder
  • 2 tsp. sugar
  • dash salt
  • 1/2 tsp. nutmeg
  • Overnight version
  • additional 1/3 cup milk

Preparation

Step 1

1. Combine milk and bulgur; let stand 30 minutes.
2. Stir together in a large mixing bowl flour, baking powder, sugar, salt, and nutmeg. Set aside.
3. When bulgur in finished soaking, add beaten eggs and oil then mix.
4. Add bulgur mixture to flour mixture. Stir until just moistened. Pour batter into buttered 10" pie plate.
5. Arranged smokies spoke fashion on top of batter. Brush top of batter with a little milk.
6. Bake in a 400 degree oven for 20 minutes.
7. Serve with syrup and honey.

Overnight version:
1. Combine 3/4 cup milk and bulgur; place in fridge overnight.
2. Stir together in a large mixing bowl flour, baking powder, sugar, salt, and nutmeg. Set aside.
3. Combine beaten eggs and oil, set aside in fridge.
4. In the morning: Add additional 1/3 cup milk to bulgur mixture. Mix in eggs and oil and then add to flour mixture. Stir until just moistened. Pour batter into buttered 10" pie plate.
5. Arranged smokies spoke fashion on top of batter. Brush top of batter with a little milk.
6. Bake in a 400 degree oven for 20-30 minutes.
7. Cut into wedges with sausage link in the middle. Serve with pancake syrup.
