Wonderful cold salad using wild rice and vegetables in a curry vinegrette.

Ingredients

  • Rice:
  • 1/3 cup wild rice
  • 3/4 tsp salt
  • 2 cups water
  • Salad:
  • 4 oz. cubed smoked deli turkey or ham
  • 3/4 cup pepper jack cheese, julienned
  • 3/4 cup cauliflower florets
  • 1 carrot, julienned
  • 3/4 cup walnut halves, optional
  • 3/4 cup red bell pepper, strips
  • 4 green onions, thinly sliced
  • black pepper to taste
  • Dressing:
  • 1/2 cup canola oil
  • 2 Tbsp. lemon juice
  • 2 Tbsp. white wine vinegar
  • 1/2 tsp. dry mustard
  • 1/2 tsp. curry powder

Preparation

Step 1

Rice:
Cook rice according to package directions.

Dressing:
1. In a small bowl beat dressing until emulsified.
2. Pour over warm cooked rice.

Salad:
1. In a large mixing bowl combine all ingredients.
2. Add a few grinds of black pepper to taste.
3. Chill overnight

Variations:
Add any other types of crunchy fresh vegetables.
