Ingredients
- 1 layer pie crust (1 stick butter, 1 1/4 c flour pulse in quisinart add ice water until dough holds together - chill)
- 1/2 sweet yellow onion
- 1 small zucchini
- 1 small yellow squash
- 1 c mushrooms
- spinach (optional)
- 3 eggs
- 1 1/4 c Milk
- 1/2 c Sharp Cheddar (irish white is good)
- 1/2 c Asiago Cheese
- salt
- pepper

Preparation
Step 1
Make pie crust and chill (or buy premade pie crust)
Slice onions into thin slivers. season w/ salt and pepper. Saute onions until soft. Thinly slice zucchini and squash and add to saute pan. Season w/ salt/pepper. Add Mushrooms. Cook until vegetables are soft and slightly golden.
Remove from heat set aside.
Roll out pie crust for and lay into pie pan.
layer in vegetables till evenly distributed. top with Spinach (uncooked) if desired.
Top w/ grated cheese.
mix eggs w/ Milk until well mixed. Pour egg mixture over vegetables/cheese. Season w/ a bit of pepper at end.
Bake at 375 degrees for 50 min to 1 hour until golden brown on top. Allow to set/cool for 20-30 minutes.
