Ingredients

  • 3.5 cups coarsely chopped small red potatoes
  • .5 cups chopped onion
  • .5 cups sour cream
  • .5 cups Monterey Jack cheese
  • .5 cups shredded sharp cheddar cheese
  • .5 tsp. salt
  • .25 tsp. ground red pepper
  • 1 medium tomatoes, seeded and chopped

Preparation

Step 1

In a large sauce pan cook potatoes and chopped onion, covered in a small amount of boiling water for 12 to 15 minutes or until tender; drain. Stir in sour cream, cheeses, salt and red pepper. Stir in chopped tomatoes. Spoon into a 2-quart rectangular baking dish Bake uncovered in a 350 degree oven about 30 minutes.
