GRILLED PESTO MARINATED SKIRT STEAK WTIH BLUE CHEESE FONDUE

grill steak (I also did chicken) on kababs for dipping sized pieces. Can marinate them in pesto. To make the blue cheese fondue, over medium low heat cook 1 tbsp butter, 1 ½ tsp finely chopped fresh thyme and 1 tsp minced garlic about two minutes until garlic soft, don’t let garlic brown or burn. Then add 2 c heavy cream (two cups is equivalent to I small container) and cook until reduced by 1/3, at this step up the heat to medium. Lower heat to maintain slow simmer and add ½ pound blue cheese and mix until smooth then add pepper and transfer to a fondue pot. Can substitute blue cheese with brie or aged English cheddar. Can also use this sauce for base for lasagna, tossed with pasta noodles or as a sauce for asparagus. Can also spoon it over grilled steak. We tried this on 06/11/2008, Jackie and I loved it, the boys did not like the blue cheese sauce. I burned the meat a little, I need to work on my kabob grilling technique.
