  • 3 green plantains, peeled and sliced diagonally into 1 inch pieces
  • 2 cups vegetable oil for deep frying

In a bowl, mix water and salt. Put plantain slices into the salted water and allow to stand minutes. In a deep frying pan, heat oil to about. Drain plantains and pat dry. Fry until tender (not crisp), about 8 minutes. Remove from pan with a slotted utensil and place pieces on layered paper towel, press to flatten (try using a bottle filled with liquid). Return flattened slices to oil and fry again, this time until golden brown and crisp, approximately - minutes. Drain again on paper towels and serve hot.
