  • 12 lb. turkey
  • 1 onion
  • few sprigs thyme
  • 1 lemon
  • head of garlic
  • 2 tbsp. melted butter
  • salt and pepper

Step 1

1. Wash turkey, remove neck and giblets, and pat dry.
2. Sprinkle salt and pepper in the cavity of the turkey. Quarter the onion and lemon and stuff into the cavity. Also add the thyme. Cut the head of garlic in half and also insert into the cavity.
3. Tie the legs together if not already done so and bend back the wings so they are tucked under the bird. This will prevent the wing tips from burning.
4. Brush the outside of the bird with melted butter and season well with salt and pepper.
5. Roast at 350 degrees for 2 1/2 hours. Each additional pound of meat requires an extra 15 minutes of roasting.
6. Let rest for 20 minutes before serving.
