Ingredients

  • 2 C long grain rice
  • 7 C water
  • 1/2 t cinnamon
  • 1 C milk (1%, 2% or whole)
  • 3 egg yokes
  • 1 cube butter
  • 1 can sweetened condensed milk
  • 1 can evaporated milk
  • 1/2 C sugar
  • 1 t vanilla

Preparation

Step 1

Rinse the rice, bring to boil then reduce to simmer for about 20 minutes or until rice is tender, but firm, do not over cook. To prevent curdling - take a cup or two of the rice (with liquid) and mix in egg yokes, then add back into the rest of the rice. Cook for 3 to 5 minutes. Add in the rest of the ingredients.
