  • 1 large egg, beaten
  • 1/4 cup low-fat milk
  • 1/4 cup canned pumpkin
  • 1 tablespoon brown sugar
  • scant 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon vanilla
  • 4 slices French bread

Instructions

1. In a medium bowl, whisk together all of the ingredients except bread.

2. Spray a nonstick skillet or griddle with cooking spray, and place over medium heat. Gently dip a slice of French bread in egg mixture, making sure to let excess liquid drip off. Cook for about 2 minutes, or until golden brown on the bottom. Flip and cook another 2 minutes. Repeat with remaining slices of bread.
