Ingredients
- For the Limoncello Cupcakes:
- 3 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 8 tablespoons butter, softned
- 4 ounces cream cheese, softened
- 2 cups granulated sugar
- 6 large eggs
- 4 tablespoons Limoncello
- 1 cup buttermilk
- 1/2 cup fresh lemon juice
- zest of one lemon
- For Lemon Curd:
- 1 cup fresh lemon juice
- zest of 4 lemons
- 1/2 cup granulated sugar
- 2 eggs and 2 yolks
- For Limoncello Cream Cheese Frosting:
- 8 tablespoons butter, softened
- 8 ounces cream cheese, softened
- 4 cups sifted powdered sugar
- 2 tablespoons of Limoncello
- For Raspberry Sauce:
- 4 tablespoons Raspberry Jam
- 2 Tablespoons Raspberry Licquer

Preparation
Step 1
For Limoncello Cupcakes:
1)Preheat oven to 350 degrees-rack in center.
2)Grease and flour muffin tins or place papers in tin.
3)Combine the flour, baking powder and salt in a bowl and set aside.
4) In a large bowl, beat butter, cream cheese and sugar till light and creamy.
5) One at a time, add eggs and beat.
6) Add Limoncello and beat.
7) Using a low speed, add flour alternating with buttermilk-beat till mixed.
8) Add lemon juice and beat.
9) Add zest and beat till mixed.
10) Place the batter in the muffin tins or papers.
11) Bake for 20 minutes.
12) Cool on a wire rack.
For Lemon Curd:
1) In a saucepan stir lemon juice , zest and sugar together and let simmer.
2) Whisk eggs and yolks together in a bowl.
3) Whisk the lemon mixture into the eggs.
4) Add mixture back into sauce pan and cook till thickens.
5) Remove from heat and let cool.
For Limoncello Cream Cheese Frosting:
1) Beat butter and cream cheese till light and creamy.
2) Add Limoncello and beat till mixed.
3) On low speed, gradually add sugar and beat till smooth.
For Raspberry Sauce (Optional):
1)In a small saucepan mix Raspberry jam and Raspberry lacquer.
Heat till jam thins.
2) While hot, decorate plate, as mixture congeals when cool.
Putting the Cupcakes together:
1) Cut a hole into the top of each cupcake, making a small cavity.
2) Fill each hole with lemon curd.
3)Pipe or spread frosting on each cupcake.
4) If you\'d like top with edible pearls, yellow granulated sugar, candy lemon slice or a thin slice of fresh lemon.
For a romantic look, spread or drizzle raspberry sauce on plate.
