Ingredients

  • 2 pounds leftover beef or pork roast, shredded
  • 1/4 cup olive oil
  • 1 large tomato, chopped
  • 1 Tbsp tomato puree
  • 1 tsp salt
  • 1 large onion, minced
  • 1/2 green bell pepper, chopped
  • 1 tsp fresh oregano, chopped
  • 2 garlic cloves, crushed
  • 1 Tbsp capers, drained, rinsed
  • 1 jalapeno, seeded, minced

Preparation

Step 1

Use salt and garlic to season meat. Place oil in saucepan and heat to a medium high heat. Saute onion and green pepper until onion is translucent, about 5 minutes. Slowly mix in tomato, tomato puree and fresh oregano. Simmer together for 5 minutes. Add meat, hot pepper and capers. Reduce heat and simmer, stirring occasionally for 8 minutes.
