Ingredients
- 3 pounds of pork, veal and beef
- 2 medium onions
- 1 medium carrot
- 1 medium celery
- 1/3 cup EVOO
- 2 tablespoons butter
- kosher salt
- 1 cup white wine
- 2 tablespoons tomato paste
- 1 1/2 cups whole milk
- 6-8 cups hot stock
- 2 bay leaves

Preparation
Step 1
Mince vegetable in food processor until finely chopped paste. Cook in oil and butter, season. Cook untl its dry.
Add meat and season. Cook until done - not brown. Add wine.
Mix tomato paste with milk. When wine is evaporated add milk mixture - cook that down.
Add 2 cups stock and bay leaves, bring to simmer. Cover and cook 15 - 20 min. Add another 2 cups, cook 20 min ... and the last 2 cups.
All liquid should be incorporated and sauce thick. check seasoning.
Makes about 7 cups
