PESTO MUG BREAD PUDDING

Ingredients
- 1 cup day old baguette (cut in 1/2-inch pieces)
- 1 egg (lightly beaten)
- 1/2 cup milk
- 1 tablespoon pesto (store-bought)
- 1/4 cup gruyere (shredded plus extra for garnish)
- kosher salt and freshly ground black pepper (to taste)

Preparation
Step 1
In a mug, place the bread cubes. In a small bowl, add the egg and milk and whisk until lightly beaten. Add the pesto and cheese and mix to combine. Season with salt and pepper. Pour over the bread and press down allowing the bread to soak up the mixture.
Top with 2 additional tablespoons of cheese. Place in the microwave and cook on medium power for 2-3 minutes.
