Ingredients

  • 1/2 cup buttermilk
  • 1 large egg
  • 2 tablespoons of sugar
  • 2 tablespoons of unsweetened applesauce
  • 1/3 cup cornmeal
  • 2/3 cup of whole wheat flour
  • 2 tsp of baking powder
  • 1/4 tsp of salt
  • 1/2 tsp cinnamon
  • 1/2 cup of fresh blueberries

Preparation

Step 1

1. Spray a 6-cup muffin tin with nonstick spray (or use cupcake liners). Preheat oven to 350 F.

2. In a medium size bowl, mix together the flour, cornmeal, baking powder, cinnamon, and salt and set aside.

3. In a small bowl, whisk together the buttermilk, egg, applesauce, and sugar.

4. Add the wet ingredients all at once to the dry ingredients:

5. Mix until just barely combined and then fold in the blueberries. It is really important not to over mix this

6. Divide into 6 muffin cups, they will be pretty full. Put into oven, bake 20-25 min
