Peanut Butter Lover's Cake

Ingredients
- 2 c flour
- 1 t baking soda
- 1/2 t salt
- 3/4 c butter, softened
- 2 c sugar
- 1 t vanilla
- 5 eggs
- 1 c creamy peanut butter
- 1 c buttermilk
- Peanut Butter Frosting (see below)
- 1/4 c chopped peanuts

Preparation
Step 1
1. Grease and lightly flour three 9x1 1/2-inch round baking pans. Set aside. 2. In a bowl, combine flour, baking soda, and salt; st aside.
3. In a large bowl, beat butter with an electric mixer on medium to high speed 30 seconds. Add sugar and vanilla; beat until well mixed. Add eggs, one at a time, beating well after each addition. Beat in peanut butter. Add flour mixture and buttermilk alternately to beaten mixture, beating on low speed after each addition just until combined. Pour into prepared pans.
4. Bake in a 350 degree oven 25 to 30 minutes or until a toothpick inserted near center comes out clean. Cool in pans on wire racks 10 minutes. Remove from pans. Cool on wire racks. Frost with Peanut Butter Frosting. Sprinkle top of cake with peanuts
5. Peanut Butter Frosting: In a large bowl, beat 1/2 c creamy peanut butter with an electric mixer until smooth. Add 3 c sifted powdered sugar; beat until combined. Beat in 1/2 c milk and 2 t vanilla until combined. Beat in 3 1/2 c additional sifted powdered sugar until combined. Add additional milk, 1 t at a time, until of a desired spreading consistency.
