Ingredients

  • 1/2 C sliced zucchini
  • 1/3 C sliced fresh mushrooms
  • 1/3 C chopped onion
  • 2 tsp vegie oil
  • 1 TBL minced fresh parsley or
  • 1 1/2 tsp dried parsley flakes
  • 3/4 tsp minced fresh basil or
  • 1/4 tsp dried basil
  • 1 3/4 C cubed bread
  • 1/2 C shredded mozzarella
  • 2 eggs
  • 1/2 C milk
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1 plum tomato, seeded & chopped

Step 1


1/2 C sliced zucchini
1/3 C sliced fresh mushrooms
1/3 C chopped onion
2 tsp vegie oil
1 TBL minced fresh parsley or
1 1/2 tsp dried parsley flakes
3/4 tsp minced fresh basil or
1/4 tsp dried basil
1 3/4 C cubed bread
1/2 C shredded mozzarella
2 eggs
1/2 C milk
1/4 tsp salt
1/8 tsp pepper
1 plum tomato, seeded & chopped

Instructions:
in sm. skillet, saute zucchini, mushrooms & onion in oil until tender
drain
stir in parsley & basil

in 8"x4" loaf pan coated w/ cooking spray, layer 1/2 of bread cubes &
mozzarella cheese.
top w/ vegies & remaining bread & cheese

in sm. bowl, whisk egg, milk, S & P
pour over cheese
sprinkle w/ tomato

cover & bake @350 for 20 min
uncover, bake 10-15 min longer or until knife inserted near center comes
out clean
let stand for 5 min before cutting
