Maple Oatmeal Bread

- 1 pkg active dry yeast
- 1 1/4 c warm water
- 1/3 c maple syrup
- 1 T cooking oil
- 1 t salt
- 1 c quick-cooking rolled oats
- 2 3/4 to 3 1/4 c bread flour
- Maple Butter (optional)

Step 1
1. In a large bowl, sprinkle yeast over warm water; let stand 5 minutes. Stir in maple syrup, cooking oil, salt, and rolled oats. Stir in 2 1/2 c of the bread flour, a little at a time, until dough begins to form a ball.
2. Turn out onto a lightly floured surface. Knead in enough of the remaining bread flour to make a moderately stiff dough that is smooth and elastic (6 to 8 minutes total).
3. Shape dough into a ball. Place in a lightly greased bowl, turning once to grease surface of dough. Cover; let rise in a warm place until double the size (45 yo 60 minutes).
4. Punch dough down. Turn out onto a lightly floured surface. Divide in half. Cover. Let rest 10 minutes. Meanwhile, grease two 8x4x2-inch loaf pans.
5. To shape, gently pat and pinch each portion into a loaf shape, tucking edges beneath. Place into prepared pans. Sprinkle with quick-cooking rolled oats, if desired. Cover; let rise in a warm place until nearly double (30 to 40 minutes).
6. Bake in a 350 degree oven 35 to 40 minutes. Immediately remove from pans. Cool on wire racks. Serve with Maple Butter if desired.
