BREAST****Slow Cooker Butter Chicken 1 Picture

Ingredients

  • 2 onions, diced
  • 3 cloves garlic, minced
  • 3 tbsp butter
  • 2 tbsp grated fresh ginger
  • 1 tbsp packed Splenda brown
  • 2 tsp chili powder
  • 3/4 tsp ground coriander
  • 3/4 tsp ground turmeric
  • 1/2 tsp cinnamon
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 cans fire-roasted tomatoes
  • 1 cup sodium-reduced chicken broth
  • 1/4 cup almond butter or cashew butter
  • 1 lb shredded, poached chicken breast, divided
  • 1 cup 2% Greek yogurt, divided
  • 2 tbsp chopped fresh cilantro, if available, divided

Preparation

Step 1

In slow cooker, combine onions, garlic, butter, ginger, brown sugar, chili powder, coriander, turmeric, cinnamon, cumin, salt, pepper and tomatoes.

Whisk broth with almond butter; pour into slow cooker.

Cover and cook on low for 5 hours or for up to 8 hours.

With immersion blender or in blender, purée sauce until smooth. Divide among four ziplock bags and freeze.

To serve, reheat over low heat until hot. Add 4 ounces shredded, poached chicken breast to each serving and heat through. Stir in 2 tablespoons of Greek yogurt and heat through again.

Serve over brown basmati rice or freekah, sprinkled with cilantro.
