Ingredients

  • 1 clove
  • 1 med yellow onion, peeled
  • 8 C chicken stock
  • 1 bay leaf
  • 1 LB Am. brown lentils - rinsed
  • S & P
  • 2 cloves garlic, peeled & minced
  • 1 tsp finely chopped fresh thyme
  • 2 tsp butter 2 tsp chopped fresh mint

Preparation

Step 1


1 clove
1 med yellow onion, peeled
8 C chicken stock
1 bay leaf
1 LB Am. brown lentils - rinsed
S & P
2 cloves garlic, peeled & minced
1 tsp finely chopped fresh thyme
2 tsp butter 2 tsp chopped fresh mint

Instructions:
press clove into onion & place onion in lg. saucepan
add stock, bay leaf, lentils & a pinch of S & P
bring to boil over high heat, then reduce heat to med. & simmer
skimming occasionally, until lentils are tender 30-35 min

discard onion & bay leaf & stir in garlic, thyme & butter
reduce heat to med-low & cook, just below simmer, for 10 min, allowing
flavors to blend
season w/ S & P
ladle into bowls
garnish w/ mint & serve

if desired, soup can also be pureed before serving
