Sour Cream Waffles

- 2 eggs separated
- 1 1/2 cups sour cream
- 6 tablespoons butter, melted
- 1 1/2 teaspoons vanilla extract
- 2 1/2 cups all purpose flour
- 3 tablespoons sugar
- 1 teaspoon baking soda

Step 1
1. In a spotlessly clean bowl. Beat the egg whites until they are stiff but not dry.
2. In a large bowl, whisk together the egg yolks with the sour cream,k melted butter, and vanilla. Sift the flour, sugar, and baking soda directly over the wet ingredients and stir just to combine (don't stir till it's smooth, or you'll beat out all the air bubbles from the bakins soda combining with the sourcream, and your waffles won't have as much lift).
3. Gently fold the beaten egg whites into the batter and cook according to the manufacturer's instructions for your waffle iron. If you're cooking all the waffles at once before eating them set the finished waffles on a heatproof platter in a 185 degree oven until ready to serve.
