Ingredients
- 1 1/4 C all purpose flour
- 2/3 C sugar
- 1/2 C cornstarch
- 1 TBL poppyseeds
- 2 1/4 tsp baking powder
- 1 tsp salt
- 2 TBL butter
- 1 C skim milk
- 2 tsp freshly grated lemon zest
- 1 1/2 tsp vanilla
- 1 lg egg

Preparation
Step 1
preheat oven to 350
grease & flour 8 X 2" cake pan, knocking out excess flour
in bowl whisk together flour, sugar, cornstarch, poppyseeds, baking
powder & salt
w/ fingers blend in butter until incorporated
in lg. measuring cup, lightly beat together milk, zest, vanilla & egg
stir milk mix. into flour mix. until just blended & pour batter into pan
bake cake for 35 min or until tester comes out clean
remove cake from pan & cool on rack
