Ingredients

  • CRUST
  • 1/4 lb ((1 stick) butter
  • 1/4 lb (1 stick() marg.
  • 2 C all-purpose flour
  • 1/2 C confectioners' sugar
  • FILLING
  • 4 eggs
  • 4 TBL flour
  • 2 C sugar
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 6 TBL freshly squeeze lemon juice

Preparation

Step 1

CRUST
1/4 lb ((1 stick) butter
1/4 lb (1 stick() marg.
2 C all-purpose flour
1/2 C confectioners' sugar

FILLING
4 eggs
4 TBL flour
2 C sugar
1/2 tsp salt
1 tsp baking powder
6 TBL freshly squeeze lemon juice


Instructions:
preheat oven to 350

cream butter, margarine, flour & sugar together

press mix. into bottom of 13X9X2" pan
press dough gently abt. 3/4" up sides of pan
bake 20 min

while crust is baking, make filling
combine eggs, flour, sugar, salt & baking powder in bowl
mix well
stir in lemon juice

remove baked crust from oven & pour egg mixture over it
spreading it evenly

return pan to 350 oven & bake for 20 min or until browned

let cool & sprinkle w/ additional confectioner's sugar

cut into squares to serve
