Ingredients

  • 1 package (6 oz.) Baby Spinach and Radicchio Salad Blends (OPTIONAL)
  • 2 cans (15 oz. each) black beans, well drained
  • 1 can (20 oz.) Crushed Pineapple, well drained
  • 1 lb. cooked medium shrimp, shelled and deveined (SMALL SHRIMP OR CUT MEDIUM)
  • 1/2 cup finely diced Red Onion
  • 1/2 cup coarsely chopped fresh cilantro (USE FULL AMOUNT)
  • 1/2 cup oriental or oriental chicken salad dressing (ANNIE's SHITAKE)
  • 1/3 cup flaked coconut
  • 2 tablespoons finely chopped fresh mint leaves (OPTIONAL)
  • 1 large fresh jalapeno chile, finely chopped

Preparation

Step 1

Toss together beans, crushed pineapple, shrimp, onion, cilantro, salad dressing, coconut, mint and jalapeno in large bowl. Spoon over salad.
