  • 3 broiler-fryer chicken, cut in serving pieces
  • 1/4 c. water
  • 2 tsp. salt
  • 1 qt. salad oil
  • Batter (below)

Preparation

Step 1

Place chicken pieces in baking pan; add water and sprinkle with salt. Cover with foil; bake in 375 degree oven 45 minutes. Remove chicken pieces from liquid; dry well. If desired, remove skin. Heat salad oil to 350 degrees in heavy 3 quart saucepan. Dip chicken pieces in batter (recipe below); drain off excess. Fry, 2 or 3 pieces at a time, until golden brown, about 3 minutes. Drain on paper towels. Makes 6 servings.

Batter: Sift into a mixing bowl 1 1/4 cups flour, 1 teaspoon baking powder, and 1/2 teaspoon salt. Add 1 egg, 1 cup milk, and 1/4 cup salad oil. Beat until smooth.
