Ingredients

  • Crust:
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 2 1/2 cups flour
  • 1 cup butter, softened
  • Topping:
  • 4 large eggs
  • 1 1/2 teaspoons vanilla
  • 3 tablespoons butter
  • 1 1/2 cups sugar
  • 1 1/2 cups light Karo syrup
  • 2 1/2 cups pecan halves (or chopped pecans, if you prefer)

Preparation

Step 1

Preheat oven to 350 degrees

Prepare and bake the cookie crust as follows: Spray a 10x15 inch baking dish with Pam. In a food processor, process the sugar, flour, salt and butter until mixture resembles fine crumbs.

Press into prepared pan and bake for 20-30 minutes or until light brown.

While baking, prepare filling: Beat eggs, corn syrup, sugar, butter and vanilla until blended. Stir in pecans.

Pour mixture over hot crust.

Bake for 30 minutes. Cool and cut into squares.
