Ingredients
- 2 shallots, chopped
- 1 carrot, chopped
- 1 celery rib, chopped
- 2 bone-in chicken breast halves, with skin
- 2 whole chicken legs or thighs
- Olive Oil
- Season Salt

Preparation
Step 1
Place vegetables in bottom of foil lined, sprayed, pan
Rub chicken with oil and season salt
Place on top of vegetables
Roast at 425 degrees approximately an hour
