Copycat KFC Cole Slaw

This recipe has been modified to work with the South Beach diet. Letting it chill for 2 to 3 hours is helpful for the flavors.

Ingredients
- 8 cups cabbage, chopped very fine (1 head cabbage)
- 1/4 cup finely shredded carrot (1 carrot) -(omit for Phase 1)
- (I have substituted 16 ozs. pkg preshredded cole slaw mix found in the produce dept. in place of cabbage and carrots.)
- 1/3 cup Splenda
- 1/2 tsp salt
- 1/8 tsp pepper
- 1/4 cup milk
- 1/2 cup mayonnaise (light only)
- 1/4 cup buttermilk (low fat)**
- 1-1/2 tbsp white vinegar
- 2-1/2 tbsp lemon juice
- **use low fat milk with a bit of vinegar as a substitute for buttermilk

Preparation
Step 1
* Be sure the cabbage and carrots are chopped up into
very fine pieces. (or use prepackaged cole slaw mix)
* Combine sugar, salt, pepper, milk, mayonnaise buttermilk, vinegar
and lemon juice and beat until smooth.
* Add the cabbage and carrots and mix well.
* Cover and refrigerate for at least 2 hours before serving to blend flavors.
