Ingredients
- 4 skinless, boneless chicken breast halves
- 1 1/2 cups margarita drink mix
- 1 tea. ground cumin
- 1 tea. finely shredded lime peel
- 1/2 cup mayonnaise
- 2 Tbsp. lime juice
- 1/8 tea. cayenne pepper
- 4 medium tomatoes, sliced
- 2 medium avocados, halved and sliced
- 1/2 medium red onion, thinly sliced
- 1/4 tea. creacked black pepper

Step 1
Place chicken breast in a ziplock. COmbine margarita mix, cumin and lime peel. Pour over chicken, seal bag. Refrigerate 2-8 hours. Drain marinade and discard.
Grill chicken over medium coals for 12-15 minutes or until chicken is no longer pink (170 degrees), turning once during grilling.
In medium bowl cobmine mayonnaise, lime juice, and cayenne. Coasrsely chop chicken. Add to mayonnaise mixture. Gently toss.
Line four salad plates with tomato slices. Top toimatoes with chicken, avocados, and red onion,. Sprinkle with black pepper.
