  • FOR DRESSING:
  • 1/2 cup mayonnaise
  • 3 Tbsp. sugar
  • 2 Tbsp. fresh lime juice
  • 2 Tbsp. rice vinegar (not seasoned)
  • 1 Tbsp. soy sauce
  • 2 tea. finely grated peeled fresh ginger
  • 1-2 tea. hot sauce
  • 1/2 tea. salt
  • 1/4 tea pepper

  • FOR SLAW:
  • 1 1/2 lb. Napa cabbage, thinly sliced (8 cups)
  • 1 lb. red cabbage, thinly sliced (4 cups)
  • 2 large carrots, cut into matchsticks
  • 1/2 sweet onion, thinly sliced
  • 3 scallions, thinly sliced

Preparation

Step 1

Whisk together all dressing ingredients in a bowl until sugar is dissolved, then let stand 15 minutes.

While dressing stands, toss together slaw ingredients in a large bowl.

Add dressing and toss until combined well.

Chill slaw, covered, 1 hour (for cabbage to soften slightly and for flavors to develop).
