Ingredients
- FOR DRESSING:
- 1/2 cup mayonnaise
- 3 Tbsp. sugar
- 2 Tbsp. fresh lime juice
- 2 Tbsp. rice vinegar (not seasoned)
- 1 Tbsp. soy sauce
- 2 tea. finely grated peeled fresh ginger
- 1-2 tea. hot sauce
- 1/2 tea. salt
- 1/4 tea pepper

- FOR SLAW:
- 1 1/2 lb. Napa cabbage, thinly sliced (8 cups)
- 1 lb. red cabbage, thinly sliced (4 cups)
- 2 large carrots, cut into matchsticks
- 1/2 sweet onion, thinly sliced
- 3 scallions, thinly sliced

Preparation
Step 1
Whisk together all dressing ingredients in a bowl until sugar is dissolved, then let stand 15 minutes.
While dressing stands, toss together slaw ingredients in a large bowl.
Add dressing and toss until combined well.
Chill slaw, covered, 1 hour (for cabbage to soften slightly and for flavors to develop).
